CUCUMBER SALAD | Health Benefits Of Cucumbers

Creamy Cucumber salad is officially the first in the series of the fun summer recipes. Summer is almost here and everyone is looking for summer recipes that are quick, easy and cool on the system. Moreover who doesn’t love a good creamy cucumber salad?

It is fresh, tasty and doesn’t require a million ingredients. Not to mention it makes the perfect side dish to every meal. It can be tweaked to make colourful meals that kids would love. The best part of this super easy, creamy cucumber salad: this is one of those recipes kids could make themselves.

We like to use whatever fresh herbs we have on hand for the garnish. Today we used cilantro, but you could also use Parsley. There is really no wrong way to enjoy a salad. It is a simple recipe to try out and have kids get involved. It is also a skinny recipe that moms on a diet can enjoy guilt free!

Tip: Do not peel your cucumbers completely. Keep the peels on and off on the cucumbers. Minerals in cucumbers are clustered in the peel. The magnesium and potassium help to keep blood pressure in check.

The combination of flavours is just so good. Not to mention the overall salad is just so easy and basic. You can pretty much whip up a bowl of this salad any day of the week.

# You’ll need the following ingredients to make Greek Cucumber salad:

Red onions use them fresh or as pre-marinated

Olive oil

Apple vinegar

Dried Oregano

Fresh Cucumbers

Greek Yogurt

Fresh lemon juice

Apple Vinegar

Garlic

Fresh sesame seeds

Creamy Yogurt Dressing With a Skinny Twist

I like to add my own skinny tweaks to my recipes, so I can enjoy them and have one less thing to haunt me with a bad food choice. I swapped the mayonnaise with a Greek yogurt dressing. Very similar to a traditional tzatziki sauce. Except it doesn’t have any shredded cucumbers in the dressing.

But it’s simply Greek yogurt combined with lemon juice, garlic, and sesame seeds to get the best flavors.

It’s tangy and fresh, with a slight bite from the garlic and it’s good with grilled chicken, or shrimp.

How To Make Creamy Yogurt Cucumber Salad

Step 1: Marinate the onions – Kids usually don’t like to chew on raw onions and we usually pick them out the salad. However if you would want to use marinated onions. They lift up the flavours and kids usually love the twist.

In a small bowl combine the sliced Red onions with Olive oil, Cider vinegar, and Oregano. Let the onions sit at room temperature while you prepare the dressing and the rest of the salad.

Step 2: Prepare the dressing – combine the Greek Yogurt, lemon juice, garlic, and sesame seeds. Season the mixture with salt and pepper, to taste.

Step 3: Combine Together – in a large salad bowl, combine the sliced cucumbers with marinated onions and dressing. Mix to combine. Enjoy immediately or refrigerate for upto 30 minutes.

How to keep cucumber salad crisp

If you do not like a leaky salad, then one way to guarantee that your cucumber salad is crisp is to buy the freshest cucumbers. Look for firm cucumbers,without blemishes or soft spots. They should be dark green without any yellow spots.

Another way to guarantee a crisp cucumber salad is to toss the salad with the dressing just before serving . Otherwise, if you prepare the salad in advance the cucumbers will release water and begin to soften.

How to use Leftover salad:

If you like the crisp taste of cucumbers, I recommend serving this salad immediately or within a half-hour of prep. Otherwise, they begin to look sorry for themselves as they begin to soften and release some of their water. Alternatively, you can store the leftover salad in the refrigerator for upto 1 day and use them in a soup. A few ideas listed down.

Make A Cucumber Yogurt Soup

Transform the leftover salad by blending with a little cooked potato, hot water and a dash of Greek Yogurt and pepper powder to make a simple soup.

Leftover Salad Smoothies or Pestos

Add the leftover salad to a green smoothie along with other ingredients like apple, ginger and lemon, or whizz up a quick pesto with with whatever nuts you have on hand and a splash of olive oil.

Hey thank you Justine! Good enough you may peel it but you might end up losing some essential nutrients. But wait we are using marinated onions instead of raw ones, this will take care of any indigestion and keep your tummy happy!

So good is apple vinegar you put it twice , only joking Talat but marinating the onions so you get the flavour is pure genius. My tummy does not tolerate raw onion, but I can not wait to experiment with marinating . Thank you I pinned for regular use.

I love Greek salad; in fact, it’s my favourite of all the salads out there (next to Waldorf salad). I’m not sure summer is almost here in the UK, but it’s a salad I can eat at any time of the year. I’m rather fond of cucumber sandwiches, too.
