Soft Coconut Milk Rice Cake｜Japanese Rice Cake Recipe
Mochi or Japanese rice cakes is one of Japan`s favourite foods. It is not only a traditional food with many ways to enjoy it, but is also gaining popularity in many international cuisines. These rice cakes are cute round buns and are sold as sets in almost every departmental store from November onwards in Japan.

Soft Coconut Milk Rice Cake｜Japanese Mochi Cake Recipe
- 11/2 cups Sweet rice Flour
- 1 cup Sugar
- 1 tea spoon Baking power
- 3 Eggs
- 1 Can Coconut milk
- 11/2 tѕр Orange zest
- 11/2 tѕр Vanilla extract
- In a bоwl соmbіnе 11/2 cups sweet rice flour, 1 cup sugar, 1 tsp baking powder, mix well and keep aside
- In a separate bowl, break 3 eggs and keep on beating. Pour in a can of coconut milk, 11/2 tsp vanilla extract, fold in 11/2 tsp of orange zest and beat them all together until well combined and a little fluffy.
- Add to the dry mixture and mix thoroughly
- Pour into a mold and bake at 350 F for 1 hour. Decorate with cream and chocolate shavings. Serve
